    Bread-Muffin: Apple Carrot Cinnamon Muffins

    List of Ingredients

    1/3 cup butter, softened
    3/4 cup sugar
    1 egg
    3/4 cup buttermilk
    1 1/2 apples, peeled, cored and chopped
    1 carrot, grated
    1/3 cup raisins, optional
    1 cup flour
    1 cup whole wheat flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon salt
    3 tablespoons sugar
    1 teaspoon cinnamon

    Recipe

    Preheat oven to 400ºF. Grease muffin cups. Beat together the butter and 3/4 c. sugar till creamy. Add the egg, and beat well. Add the buttermilk all at once, and stir in chopped apple, grated carrots, and optional raisins. In separate bowl, stir together the flour, wheat flour, baking soda, 1 tsp of cinnamon and salt. Combine flour mix with butter mix and blend well. Let batter rest for 5 minutes. Spoon batter into greased muffin cups. To make topping, mix together the last 3 tbl. sugar with remaining 1 tsp. cinnamon; sprinkle topping over muffins. Bake for about 20 minutes. Makes 12 muffins.
