Recipe Introduction
**special thanks to Mariann, who tried the recipe and realized I didnt have info from the original recipe about the amount of vanilla to add! She wrote me and told me she tried the recipe with 1 tsp vanilla and said the end product came out great, so I used her amount in the ingredient list below! Thanks Mariann!!!! :D
List of Ingredients
3 eggs
2 cups sugar
3 cups flour
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 cup chopped walnuts
2 cups shredded zucchini
1 cup oil
2 teaspoons baking soda
1/2 teaspoon baking powder
3/4 teaspoon nutmeg
1 tsp vanilla (see note in recipe intro)
Recipe
In a large bowl beat eggs, add oil, sugar, and vanilla; continue beating until mixture is thick and foamy. Stir in zucchini. In a separate bowl stir together flour, baking soda, salt, baking powder, cinnamon, nutmeg, and walnuts until thoroughly blended. Spoon batter equally into 2 greased and floured loaf pans. Bake in 350 degree oven for 1 hour. Makes two loaves.
