    Breakfast: Gingerbread Pancakes

    Prevention Quick and Healthy Low Fat Cooking

    List of Ingredients

    1 c flour -- sifted
    1 tsp baking powder
    1 tsp baking soda
    1/4 c brown sugar
    1 tsp ginger
    1/2 tsp cinnamon
    1/2 tsp cloves
    1/4 tsp salt
    1/2 c skim milk
    2 egg whites -- whipped
    1/2 tbsp molasses
    1/2 c applesauce -- at room temperature

    Recipe

    Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine flour, baking powder, baking soda, brown sugar, ginger, cinnamon, cloves, and salt. In another mixing bowl, combine milk, egg whites, molasses, and applesauce. Mix dry ingredients with wet ingredients just until moistened. Ladle in the batter, using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more.
