Cookies: Judy's Lemon Snowdrops *

1 cup butter -- softened
1/2 cup powdered sugar
1 teaspoon lemon extract
2 cups flour
1/4 teaspoon salt
FILLING:
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup water
2 tablespoons butter
2 teaspoons lemon peel -- grated
3 tablespoons lemon juice
3 drops yellow food coloring
Recipe
Cookies: Mix butter, 1/2 c. sugar and extract. Blend in flour and salt. If dough is soft, cover and chill. Heat oven to 400�F. Shape dough by level tsp into balls (if use more dough, they're too large!). Place 1" apart on ungreased baking sheet, flatten slightly. Bake 8-10 minutes. Immediately remove from baking sheet and cool.
FILLING: mix sugar, cornstarch and salt in saucepan. Stir in water gradually. Cook, stirring constantly until mix thickens and boils. Boil and stir 1 minute. Remove from heat, stir in butter and peel, then lemon juice and food coloring. Cool thoroughly. Assembly: Put cookies together in pairs with filling. Roll in powder sugar. Yield: 4 dozen.
