Desserts: Maple Apple Cranberry Crumble

1 cup rolled oats
1 cup fresh cranberries
1/4 cup maple syrup
1/4 cup honey
1 teaspoon vanilla extract
4 large apples, peeled, cored and sliced
1/3 cup light brown sugar
1 teaspoon cinnamon
Recipe
Place oats and cranberries in food processor and process in spurts to pulverize. Pour into a large mixing bowl.In a small saucepan, combine maple syrup, honey or fruit juice concentrate, and vanilla. Bring to a simmer over medium heat and pour over dry mixture. Stir well, working the syrup into the mixture with your hands. Place apple slices in a deep baking dish. Combine brown sugar and cinnamon, and sprinkle atop the apples. Top all with the cranberry-oat mixture. Bake at 375¼F until the oat mixture lightly browns and the fruit softens. If the oats become brown too fast, cover dish with foil and lower heat to 325¼F until apples are soft. Serve with nonfat frozen yogurt, if desired. Serves 8
