Bread-Muffin: Maplewood Nut Muffins

2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/2 cup butter, softened
2/3 cup new Hampshire maple syrup
2 teaspoons maple extract
1 cup pecans, hazelnut or walnut, chopped
Recipe
Preheat oven to 350ºF; spray muffin pan with nonstick cooking spray. In medium bowl, mix the flour, sugar, baking powder and salt. Add the egg, milk, butter, syrup, extract and nuts. Mix just until blended. Bake for 20 minutes or til tops spring back when touched. Serve warm. Makes 12-18 muffins, or 8 giant muffins.
