GLAZE:
1/2 cup apricot preserves
1/2 cup dijon mustard
ham for baking
PANTRY MUSTARD:
1/4 cup coarse grained mustard
1/4 cup dijon mustard
1/4 cup dried basil leaves
1/2 cup canola oil
Recipe
In a food processor or blender, puree the apricot preserves. Heat the puree gently in a small saucepan and blend in the mustard until smooth. Spread the glaze all over your ham before baking. When the ham is done baking, turn on the broiler. Then leave the door ajar and stand right there, watching, until the glaze is as brown as you like. It probably won't take more than 45 seconds.
For Pantry Mustard: In a food processor, blend them mustards and basil leaves until smooth. With the machine running, slowly add the oil until the mixture is smooth. the mustard keeps indefinitely refrigerated; cover it tightly to prevent it from darkening. Makes 1 cup.
