Bread-Muffin: Rum Raisin Muffins

1 cup raisins
3 tablespoons rum or apple juice
1 cup nonfat buttermilk
1/3 cup wheat bran
3 tablespoons canola oil
1 large egg white
1 1/2 teaspoons vanilla
1 cup flour
2/3 cup whole wheat flour
1/3 cup sugar
1 1/4 teaspoons baking powder
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon sugar + 1/8 tsp cinnamon (topping)
Recipe
Preheat oven to 425ºF. In a small bowl, combine raisins and rum and let sit 10 minutes. In a medium bowl, whisk together the buttermilk, bran, oil, egg white and vanilla. In a large bowl, combine all dry ingredients except for the topping. Stir raisins and rum into the buttermilk mixture. Mix this into the dry ingredients, stirring just until combined. Divide batter into 12 nonstick muffin cups which have been sprayed with cooking spray. Sprinkle topping mixture evenly over tops. Bake 12 to 16 minutes in the upper third of oven, or until golden brown. Serves 12
