Bread-Muffin: Yam Spice Muffins

2 cups whole wheat flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup water
1/2 cup raisins
1 medium cooked, mashed yam
Recipe
Preheat oven to 350ºF. In a large bowl mix flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Add yam, water, and raisins. Stir until just mixed. Lightly spray muffin pan with vegetable oil if not using a non stick muffin pan and fill cups to the top with batter. Bake for 25 minutes. Let stand for a couple of minutes before removing from the pan. When cool, store in an airtight container.
