Cookies: Blueberry Cheese Bars

List of Ingredients

1 roll refrigerated sugar cookie dough-- room temp
8 oz Cream cheese -- softened
1 Egg
1/4 cup Sugar
1/2 teaspoon Lemon rind -- grated
1 1/2 cup Blueberry pie filling


Recipe

Preheat oven to moderate (350ºF). Press dough evenly in a greased 13x9x2-inch baking pan. Beat cream cheese, egg, sugar and lemon rind in a medium-size bowl with an electric mixer until smooth. Spread cheese mixture over cookie dough. Dollop blueberry pie filling on cheese; swirl with a knife or small metal spatula. Bake in preheated moderate oven (350ºF) for 35 minutes. Cool on wire racks. Cut into bars. Refrigerate. Makes 48 bar cookies.
