    Cookies: Coconut Toffee Bars

    List of Ingredients

    CRUST:
    1/2 cup unsalted butter, room temperature
    1 cup flour
    1/2 cup light brown sugar
    1/2 teaspoon kosher salt

    TOPPING:
    2 large eggs, room temperature
    1 cup light brown sugar
    1 cup shredded coconut meat
    1 cup chopped sliced almonds
    1 teaspoon grated lemon zest (opt. if using chocolate
    1 teaspoon vanilla
    1/2 teaspoon kosher salt
    1 cup semisweet chocolate chips (optional)

    Recipe

    Preheat oven to 350ºF. Make the crust: Place butter, flour, sugar and salt in bowl of a mixer fitted with a paddle, and mix until it comes together. Press into a 9x13 inch pan, and transfer to the oven. Bake until the edges are just beginning to color, about 12-13 minutes.

    To make the topping: Place the eggs, sugar, coconut, almonds, lemon zest, vanilla and salt in the bowl of mixer fitted with a paddle, and mix until the ingredients just come together; do not overmix. Place the chocolate chips, if using, over the crust, and then pour the topping over the crust. Transfer to the oven and bake until golden and set, about 20-25 minutes. Cool in the pan and cut into 24-32 bars.
