    Bread-Muffins: Coffee Pecan Muffins

    List of Ingredients

    1 cup pecans
    1 3/4 cups all purpose flour
    1/2 cup firmly packed dark brown sugar
    3 teaspoons baking powder
    1/4 teaspoon salt
    1 egg
    1/2 cup milk
    1/2 cup (1 stick) butter melted
    2 tablespoons strong coffee
    1 teaspoon vanilla

    Recipe

    Heat oven to 400 degrees. Butter 12 muffin cups. Reserve 12 pecan halves for muffin tops. Coarsely chop remaining pieces; set aside. In large bowl, combine flour, brown sugar, baking powder and salt; mix well.

    In another bowl, lightly beat egg. Add milk, butter, coffee and vanilla; blend well. Add liquid mixture to flour mixture; mix just until combined. Fold in chopped pecans. Spoon batter into buttered muffin cups, top with reserved pecan halves. Bake at 400 degrees for 16 to 20 minutes or until toothpick inserted in center comes out clean. Serve warm
