    Leftovers: Country Ham & Corn Casserole

    List of Ingredients

    2 cups cubed cooked ham
    1/2 cup chopped green onions
    1/2 cup margarine or butter, melted
    3 eggs, well beaten
    1 (15-oz.) can Cream Style Sweet Corn
    1 (11-oz.) can Whole Kernel Corn, Red and Green Peppers, drained
    1 (7 to 8 1/2-oz.) pkg. corn muffin mix
    4 oz. (1 cup) shredded Cheddar cheese

    Recipe

    Step 1
    Heat oven to 350°F. Grease 12x8-inch (2-quart) baking dish. In large bowl, combine all ingredients except cheese. Pour into greased baking dish.

    Step 2
    Bake at 350°F. for 45 to 55 minutes or until golden brown and set. Sprinkle with cheese. Bake an additional 1 to 2 minutes to melt cheese. Let stand 5 minutes before serving. To serve, cut into squares.
