    Breakfast: Eggs for a Bunch

    List of Ingredients

    12 slices white or french bread -- crusts removed
    4 ounces lean ham -- cubed
    2 cups skim milk
    4 eggs
    1 cup egg substitute, liquid
    1/4 cup onion -- minced
    1/2 teaspoon dry mustard
    1/4 teaspoon paprika
    1/4 teaspoon salt
    1 tablespoon dried parsley

    Recipe

    Cut bread into cubes and spread over the bottom of a 7x11-inch or 9x12-inch pan that has been sprayed with non stick cooking spray. Sprinkle ham on top of bread. Using a mixer or blender, combine milk, eggs, egg substitute, onion, mustard, paprika, and salt. Pour over ham. Sprinkle with parsley. Bake at 400ºF. for 35-40 minutes or refrigerate and bake in the morning. Serves 8.

    NOTES : You can put this together the night before and bake in the morning. You may use all eggs instead of using the egg substitute. Use 4 more eggs making a total of 8. Or you can use all egg substitute which would be 2 cups. I prefer the half and half combination. You get the health benefits of the egg substitute and the real taste of real eggs.
