Salad/Dressing: Kurt's Potato Salad

List of Ingredients
8 medium red potatoes, boiled with skin on
3 ounces salami + small clove minced garlic
2 slices thick cut bacon, diced, cooked crisp -- drained
2 medium tomatoes, seeded and chopped
2 hard boiled eggs, chopped
1 medium dill pickle, drain and mince
2 tablespoons minced onion
2 tablespoons minced fresh parsley
1 tablespoon chopped fresh chives
or minced scallion tops
salt and fresh ground black pepper
2/3 cup mayonnaise
1/3 cup miracle whip (no substitutes)
Recipe
In a large bowl, mix together all but mayo and miracle whip. Then add in mayo and miracle whip; taste for seasonings. Can add more may and miracle whip if needed, keeping the same 2:1 proportions (or 1/3 c.water instead). Chill salad for several hours, up to 3 days; bring it back to room temperature before serving. Serves 6-8.
