Desserts: Queen of Sheeba Peach Tart on Butter Cookie Crust

CRUST:
2 cups flour
1/4 cup sugar
1 cup butter, softened
1 egg
3 tablespoons cream
LEMON CREAM FILLING:
1 1/2 pounds fresh peaches, peeled, stoned, sliced
1 cup lowfat sour cream
1 egg
6 tablespoons sugar
2 tablespoons grated lemon (use peel, fruit and juice)
1 teaspoon almond extract
Recipe
Frozen peaches can be used - utilize 1 pound frozen peaches, thinly sliced and thoroughly drained, patting dry with paper towels. For crust: beat together flour, sugar and butter until mixture resembles fine meal. Beat together egg and cream, and add beating until just blended. Do not overbeat. Pat dough on bottom and 1 inch up the sides of a greased and parchment-lined 10" springform pan, and bake at 350ºF for 20 minutes, or until top looks dry and is just beginning to take on color.
For filling: layer peaches into prepared crust in a decorative manner. Beat together remaining ingredients and pour evenly over the peaches. Bake at 350ºF for about 35 minutes, or until custard is set and just beginning to brown. Allow to cool in pan. When cool, remove from pan and cut into wedges to serve. Serves 8-10.
