    Salad/Dressing: Roasted Beet Salad

    List of Ingredients

    2 cans sliced beets, rinse and drain- 30 oz total
    1 1/2 cups crumbled feta cheese
    1/2 cup pitted ripe olives
    1/4 cup chopped fresh dill
    1/2 cup olive oil
    2 cloves garlic, minced
    1/4 cup red wine vinegar
    1 dash Tabasco sauce
    salt and pepper to taste

    Recipe

    Coat broiler tray w/ nonstick cooking spray. Put in oven and preheat broiler. Place drained beets on broiler tray. Place under hot broiler, turning every 2-3 minutes until edges start to brown usually takes 10 minutes or so. Remove from oven and cool. Mix remaining ingredients with cooled beets. Toss & serve. The roasting really brings out the flavor, not nearly as good without being roasted. Serves 6.
