    Veggies: Roasted Beets with Ginger Butter

    1 1/2 pounds small to medium beets, ends trimmed
    2 tablespoons butter
    1 tablespoon peeled and fine chopped ginger

    Recipe

    Preheat oven to 350ºF. Wrap beets tightly in foil. Roast beets until they are tender when pierced, 30 minutes to 1 1/2 hrs. Timing varies wildly, depending on size of beets. Let beets cool slightly. Using small sharp knife, peel beets and cut them into quarters. In large skillet, heat butter over medium heat. Add ginger and beets, season with salt and pepper, and cook, stirring constantly, until beets are heated through, 4-5 minutes. Serves 4. Goes well with roast chicken.
