    Salad/Dressing: Spinach Artichoke Pasta Salad

    List of Ingredients

    1 pound curly pasta, cooked

    PESTO:
    1 can artichoke hearts, packed in water
    1/3 cup balsamic vinegar
    4 cloves garlic (or to taste)
    salt and fresh black pepper
    4 bag fresh spinach, cleaned -- (4 to 8)
    1 pound bag fresh spinach, cleaned

    Recipe

    Including the water from canned artichokes, pulse pesto ingredients in food processor until you have a good consistency of sauce. Can throw in some lightly toasted pine nuts if desired. Can add more balsamic if needed to make pesto loose enough to toss with pasta. Refrigerate after pesto and pasta are well combined. Can add in cut fresh veggies as desired (bell pepper, carrot, snow peas, etc).
