    Veggies: Buttered Leeks with Parsley

    List of Ingredients




    8 medium leeks
    1 tablespoon to 2 Tbsp. butter
    2 tablespoons flat-leaf parsley, finely chopped
    nutmeg, freshly grated
    salt and freshly ground black pepper

    Recipe



    1. Trim the leeks and wash off any dirt.
    2. Pour 1/2 inch of boiling water into a large saucepan or frying pan and lay the leeks in it. Cover and half-boil, half-steam until tender: 7-10 minutes, depending on size. Drain, and transfer to a bowl that can accommodate them lengthwise.
    3. Add the butter, parsley, and freshly grated nutmeg. Season with salt and the black pepper, toss the leeks well, and serve at once.
