Veggies: Celeriac Puree

1 large celeriac
1 large potato
1 tablespoon butter
a little milk or light cream
salt and freshly ground black pepperRecipe
1. Peel the celeriac and the potato. Cut into even-sized chunks, place in a saucepan, and cover with boiling water. Put the lid on the pan and simmer the vegetables gently until tender: 15-20 minutes.
2. Drain, saving the water for stock. Add the butter, and mash with a potato masher (a food processor makes the potatoes glue like), adding milk or light cream for a soft consistency. Season with salt and black pepper. Serve at once or keep warm in a bain-marie on the stove for up to 1 hour. Serves: 4
