    Creepy Crunchies: Ghoulish Pita Chips

    1 8-ounce package small whole wheat pita breads
    1/2 cup chopped fresh parsley
    2 egg whites, beaten lightly
    1/4 cup olive oil
    2 large garlic cloves, minced very finely
    1 tablespoon grated Parmesan cheese
    1/2 teaspoon coarse (kosher) salt

    Heat oven to 300 degrees. Lightly coat 2-3 baking sheets with nonstick, vegetable-oil cooking spray. Cut each pita into 4 wedges, then gently cut or pull each wedge apart to form total of 64 triangles. Combine parsley, egg whites, olive oil, garlic, Parmesan cheese and salt in small mixing bowl. Spoon some parsley mixture over rough side of each triangle. Place triangles, parsley-side up, in single layer on baking sheets.

    Bake in preheated oven for 15-18 minutes or until edges of triangles are toasted and parsley topping is set. Cook chips on cooling rack. Serve when cooled. Makes 64 triangles.
