8 md Yams; cook; peel; halve
1 1/2 c Shredded coconut
1/4 c Butter; melted
1/2 c Brown sugar
1/4 c Heavy cream
1/4 c Red maraschino cherriesRecipe
Spray 2-quart casserole with cooking spray. Put yams in dish and sprinkle with a cup of coconut; Mix butter, sugar and cream and pour over coconut and yams. Top with coconut and cherries. Broil about 5 inches from source of heat until lightly brown--watch carefully, about four minutes.
Three one-pound cans yams, drained and halved may be substituted for fresh yams.
