"People tend to forget that sweet potatoes can be made like squash or other vegetables into marvelous savory dishes. No sugar, no honey, no molasses, and no marshmallows! This is one of my favorite ways to eat sweet potatoes. To make a garlic enhanced souffle, simply add a few whole garlic cloves to the liquid when boiling the sweet potatoes and mash them up with the potatoes. "
List of Ingredients
6 sweet potatoes, cooked, peeled, and mashed
salt and white pepper
1/4 cup butter
2 eggs, beaten
1/4 cup heavy cream
1 teaspoon rubbed sage
1/2 teaspoon crumbled dried thymeRecipe
Preheat the oven to 350 degrees and heavily grease a medium baking dish. Beat all of the ingredients in a large bowl until light and fluffy. Place in the prepared baking dish and bake for 30-40 minutes, or until the mixture puffs slightly and turns golden brown.
