Scary Sides: Worthwhile Winter Squash

1 1/4 pounds butternut or acorn squash, peel and seed, cut into thin slices
3 tablespoons unsalted butter
salt and fresh ground pepper
a few gratings of nutmeg
11 cups heavy cream
1/3 cup Madeira
1/2 cup fresh bread crumbs
1/2 cup chopped walnuts
2 tablespoons unsalted butter, melted Recipe
Preheat the oven to 325ºF. In a large skillet, saute the squash in the butter until it begins to brown, 4-6 minutes. Stir in the salt, pepper and nutmeg. In a small bowl, stir together the cream and Madeira. Put half of the seasoned squash into a greased 1 quart baking dish. Over it, pour half of the cream mixture. Now do it again with the other two halves. In a small bowl, stir together the bread crumbs, chopped walnuts and melted butter. Sprinkle them over the squash, making sure you sprinkle the edges also. Bake the squash for 45-50 minutes, or until it's tender and the topping is brown. If you decide to make this ahead, don't bake it; refrigerate it, then let it sit our at room temperature for 1 hour, then bake it for 1 hour. Serves 6.
