Treats: Halloween Animal Cookies

* 2-1/2 cups all-purpose flour
* 1/2 tsp salt
* 1 tsp baking soda
* 3/4 cup softened butter
* 1 cup sugar
* 1/2 tsp almond extract
* 1 large egg
* 1 recipe frosting
* Additional Items Needed: rounded toothpicks, 2-1/2-inch Halloween-shaped cookie cutters, whole fresh applesRecipe
1. Heat oven to 350 degrees and grease a cookie sheet.
2. Combine the flour, salt, and baking soda in a bowl. Set aside. In mixer bowl, beat the butter and sugar until light and fluffy, about 3 minutes. Add the almond extract and 1 large egg; beat to combine. Gradually add flour mixture and mix until blended.
3. Gather dough into a ball; flatten into a disk. Wrap and refrigerate for 2 hours or up to 2 days.
4. On a floured surface, roll dough 1/8-inch thick. Place rounded toothpicks on prepared cookie sheet. Cut out cookies using 2-1/2 inch Halloween-shaped cookie cutters and place on top of each toothpick, pressing gently. Bake for 8 to 9 minutes, until golden. Cool on wire rack.
5. Decorate cookie animals with frosting. Stick into apples.
Makes 4 dozen cookies.
