List of Ingredients
1 1/2 cups of all purpose flour
2 teaspoons of baking powder
3/4 teaspoon of salt
2/3 cup of sugar
1/4 cup of firmly packed brown sugar
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
One 8 ounce can of crushed pineapple, drained
1/2 cup of canned pumpkin
1/2 cup of cold milk
1/4 cup of butter or margarine, melted
Creamy peanut butter
Decorations: assorted candies, pretzels, mints, pipe cleaners
Recipe
Combine the first 7 ingredients in a large bowl, make a well in the center of the mixture. Combine the egg and next 4 ingredients, add to the dry ingredients, stirring just until moistened. (Batter will be stiff.) Place the paper baking cups in muffin pans, spoon the batter into cups, filling each two thirds full. Bake at 425ºF. for 20 minutes or until golden. Remove from the pan immediately, and cool on wire racks. Decorate if desired. Makes 1 dozen
TIP: Spread the muffins with peanut butter and decorate as desired. Use assorted candies, pretzels, mints and pipe cleaners to transform these snacks into devils, cats, spiders and aliens.
