Breakfast: Aunt Jemima Spiced Pancakes *

List of Ingredients
1 cup buttermilk pancake mix
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup milk
2 eggs, slightly beaten
1 tablespoon oil
MAPLE BUTTER:
1/2 cup butter
1/3 cup maple syrup
1/4 teaspoon cinnamon
Recipe
For topping, beat butter with syrup on high speed. Add cinnamon, and set aside. For pancakes, heat skillet over med-low heat or griddle to 375ºF. Combine mix, cinnamon and nutmeg; add remaining ingredients, stirring just until lumps disappear. Pour 1/4 cup batter for each pancake onto lightly greased surface. Batter may thicken upon standing. Turn when pancake tops are covered with bubbles and bottoms are golden brown. Top with maple butter and additional syrup. Can be frozen. Makes 12 pancakes.
