    Bread-Sweet: Rich Pumpkin Pecan Bread

    4 cups bread flour
    2 tablespoons baking powder
    1/2 teaspoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon pumpkin pie spice
    1-3/4 cups canned pumpkin
    1-1/4 cups firmly packed brown sugar
    1/4 cup molasses
    3 eggs, lightly beaten
    2 cups chopped pecans

    Recipe



    Preheat oven to 350°F.  Spray 2 8x4-inch loaf pans with non-stick vegetable spray. In a medium bowl, combine flour, baking powder, salt, and spices; set aside.

    In a large mixing bowl, combine pumpkin, brown sugar, molasses, and eggs, beating until well blended.  Stir 3 cups flour mixture into pumpkin mixture until well blended.  Stir in remaining flour mixture and pecans.  Spoon into prepared loaf pans.

    Bake 55 to 60 minutes or until loaves are a deep golden brown and a tester inserted in the center of the loaves comes out clean.  Cool in pans for 15 minutes.  Remove from pans; cool completely on a wire rack.
