Bread-Sweet: Cinnamon Ginger Zucchini Bread

2 cups sugar
1 cup oil
2 cups grated zucchini
3 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon ground nutmeg
1 cup chopped nuts
Recipe
Preheat oven to 325ºF. Grease and flour the bottoms of (2) 9x5x3-inch loaf pans. In a large bowl cream together sugar and oil. Add zucchini, eggs and vanilla; beat until eggs are thoroughly incorporated. Stir in flour, cinnamon, ginger, cloves, salt, baking soda, baking powder and nutmeg until just blended. Fold in nuts. Divide between the prepared pans and bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Cool for 5 minutes in pans before removing to a wire rack to cool completely.
