Condiment: Killer Cranberry Sauce

List of Ingredients
1 navel orange
1 1/2 cups granulated sugar
1/2 teaspoon grated fresh ginger
4 cups fresh cranberries
1/2 cup (2 ounces) toasted pecans Recipe
Grate the orange peel and juice the orange.
Place peel in a pot with sugar and ginger. Add juice: simmer over medium heat until the sugar is dissolved.
Add cranberries and cook until they pop, about 5 minutes. Add pecans. Let Cool.
YIELD: 4 Cups
