    Desserts-Cake: All Time Best Carrot Cake

    List of Ingredients

    1/12 cup cocoa powder
    2 cups self-rising flour
    2 cups sugar
    4 eggs
    1 teaspoon vanilla extract
    1-1/2 cups vegetable oil
    2 cups grated carrots
    1 cup crushed pineapple, undrained
    Cream Cheese Icing (below)

    Recipe

    Preheat oven to 350°F.  Spray 3 9-inch cake pans with non-stick vegetable spray.
    In a large bowl, combine cocoa powder, flour, and sugar.
    In a medium bowl, combine eggs, vanilla, and oil; beat until blended.  Add to flour mixture; mix until well blended.  Stir in carrots and pineapple.  Pour into prepared cake pans.
    Bake for 30 minutes or until a tester inserted in the center comes out clean.  Cool in cake pans for 10 minutes.  Remove from cake pans; cool completely on a wire rack.  Fill and frost the cake with Cream Cheese Icing.
     
    CREAM CHEESE ICING
    1 8-ounce package cream cheese,   softened
    1 cup butter or margarine, softened
    1 cup confectioners’ sugar
    1/2 cup flaked coconut
    1 cup chopped walnuts
    In a medium bowl, combine cream cheese, butter, and confectioner’s sugar; beat until smooth and well blended.  Fold in coconut and walnuts.
