1/2 cup butter or margarine, softened
1/2 cup sugar
1/2 cup honey
2 eggs, separated
1 cup grated apple
1 8-ounce packaged pitted dates, chopped
1 cup chopped walnuts
1-1/2 cups self-rising flour

Preheat oven to 350°F. Spray a 10-inch Bundt pan with non-stick vegetable spray. In a large mixing bowl, cream butter, sugar, and honey until light and fluffy. Add egg yolks, apples, dates, and walnuts; blend thoroughly. Add flour alternately with coffee, mixing well after each addition. In a medium bowl, beat egg whites until stiff; fold into batter. Pour into prepared Bundt pan. Bake 55 to 65 minutes until tester inserted in the center comes out clean. Serve warm or cold.
