CREPES:
3 eggs
1 cup whole wheat pastry flour
1 cup water
1/2 teaspoon honey
SYRUP:
2 cups fresh or frozen raspberries
2 tablespoons honey
1/2 teaspoon vanilla
2 teaspoons cornstarch
1/4 cup water
FILLING:
5 tart apples, thinly sliced
2 tablespoons butter
1 tablespoon honey
3 tablespoons raisins
1/2 teaspoon cinnamon
Recipe
Crepes: In large bowl, combine eggs, flour, honey and water; mix till smooth batter, consistency of light cream. Pour into 2c. measure with pouring lip and let stand for at least 30 minutes. Pour 1/4 c. of batter into nonstick 8" skillet and tilt to spread evenly. Cook for 1 minutes on each side. Remove from pan and place on a towel. Repeat with remaining batter. Using about 3 tbl. spoon filling down center of each crepe, and fold both sides over filling. Garnish with sauce or raspberries.
To make Syrup: In small saucepan combine berries, honey and vanilla. Stir over low heat until just below boiling. Mix starch with water and add to berry mixture. Cook over low til thickened, about 5 minutes. Will be jam-like consistency. For Filling: Saute apple slices in butter til slightly soft. Stir in honey, raisins and cinnamon. Remove from heat.
