Bread-Muffin: Harvest Fruit Muffins

List of Ingredients
2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg, freshly ground
1 egg
1/2 cup oil
1/3 cup milk
1 container peach yogurt (8 ounce)
3/4 cup dried fruit, chopped
TOPPING:
3 tablespoons flour
2 tablespoons brown sugar
3 tablespoons nuts, chopped
1/2 teaspoon cinnamon
2 tablespoons butter, softened
Recipe
The night before, mix together dry ingredients, then mix the topping in separate bowl. Preheat oven to 400ºF. Lightly grease muffin cups. In medium bowl, beat the egg; add the oil, milk, yogurt and dried fruit, and combine. Add the egg mixture to the dry ingredients, stirring gently just until moistened; do not overbeat. Fill muffin cups 2/3 full, and spoon 1 heaping tablespoon of topping over the batter. Bake for 20 minutes, checking at 15 minutes. Makes 12 muffins.
