    Leftover Turkey: New England Turkey Chowder

    List of Ingredients

    turkey broth 8 cups
    margarine 3/4 cup
    celery, diced 2 cups
    onion, chopped 1 cup
    cooked turkey, diced 1-1/2 cups
    corn, cream style 1 can - 19 oz 1 can -
    potatoes, mashed 2 cups
    light cream 3/4 cup
    ginger 1 tsp
    salt and pepper to taste    

    Recipe

    Place broth in large covered kettle. Melt butter in frying pan and slowly cook celery and onions until onions are transparent but not brown. Add celery, onions and remaining ingredients to broth. Stir well, heat thoroughly for 20 mins. (do not boil) and season to taste. Serve in heated bowls.

    Serves 10 -12.
