Leftover Turkey: Turkey Mushroom Quiche

9 inch (22 cm) baked pie shell 1
canned mushrooms, sliced 1/4 cup
light Cheddar cheese, grated 1 cup
green onions, thinly sliced 2
eggs, slightly beaten 4
1% milk 1 cup
cayenne pepper pinch
nutmeg pinch
salt pinch Recipe
Arrange turkey in a baked pie shell. Top with mushrooms, cheese and onions. Combine eggs, milk and seasonings. Pour into pie shell. Bake at 375 deg F. (190 deg C.) for 30-35 minutes. Serve with a tossed salad and buttermilk biscuits if desired. Makes 6 servings.
