    1 cup fine dry breadcrumbs
    1/4 cup brown sugar, packed
    2 tablespoons butter or margarine
    1/2 teaspoon ground allspice
    1/2 teaspoon ground cloves
    1/2 teaspoon ground mace
    1/4 teaspoon pepper
    1/4 cup water
    1 (10lb) fully cooked, smoked ham
    1 egg, beaten
    1/4 cup fine dry breadcrumbs
    3 tablespoons sugar

    Recipe



    Combine first 7 ingredients in a bowl; stir well. Gradually add water, stirring until just blended. Set aside. Slice skin from ham. Score fat on ham in a diamond design, making 2-inch slits, 2 inces apart. Press reserved breadcrumb mixture into slits. Brush ham with egg; sprinkle with 1/4 cup breadcrumbs and the 3 tablespoons sugar.

    Place ham, fat side up, on a rack in a shallow roasting pan. Insert meat thermometer, making sure it does not touch fat or bone. Bake, uncovered, at 325 degrees for 2 to 2 1/2 hours or until meat thermometer registers 140 degrees.
