    Bread: No Knead Brioche

    List of Ingredients

    1 cup scalded milk
    1/4 cup shortening
    1/4 cup sugar
    2 teaspoons salt
    1 cake compressed yeast
    2 eggs
    3 1/2 cups sifted flour

    Recipe

    Combine milk, shortening, sugar and salt. Cool to lukewarm, then add the compressed yeast. Mix well and blend in 2 eggs. Add the flour, mixing well until blended thoroughly Cover and let stand 15 minutes. If you are going to make into Holiday Bread at this stage add walnut halves and candied cherries or whatever you desire in way of candied fruit. Shape into rolls and place in greased pan, or into loaf pan. Let rise in warm place (85-90ºF) until double in bulk, usually about 1 hour. Bake in moderate oven (375ºF) for 20 minutes for rolls or loaf until golden brown. Test with toothpick if desired. Makes 18 rolls or one large loaf.
