Veggies: Roasted Vidalias

4 medium Vidalia or any other sweet onion, peeled and cut into 8 wedges
cooking spray
1 tsp dried thyme
1-2 tsp salt
1/8 tsp pepper
1 tbsp balsamic vinegar
Recipe
Preheat oven to 350 degrees. Place onion wedges on a cookie sheet coated with cooking spray; lightly coat the wedges with the spray also. Sprinkle the thyme, salt, and pepper over onions. Bake for 30 minutes, then turn onions over and bake for another 25 minutes or until tender. Place onions in a serving dish and drizzle with vinegar.
