    Desserts-Pie: Pumpkin Tofu Pie (Dairy Free)

    List of Ingredients

    1 1/2 cups mashed tofu
    2 cups canned pumpkin
    1/2 cup fructose or table sugar
    1/4 cup brown sugar
    1/4 tablespoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground ginger
    1/2 teaspoon ground allspice
    2 teaspoons pure vanilla extract
    1 whole wheat pastry crust, unbaked (9")

    Recipe

    Preheat oven to 375ºF. In a large bowl, combine all filling ingredients and whisk until well incorporated. Pour into prepared pie crust. Bake 55-60 minutes or until filling is firm. Serve chilled.
