Appetizer: Spinach Balls with Mustard Sauce

SAUCE:
1/2 cup dry mustard
1/2 cup white vinegar
1/4 cup sugar
1 egg yolk
SPINACH BALLS:
10 ounces frozen spinach (thaw, squeeze dry)
2 cups herbed stuffing mix -- (no cubes)
1 cup fresh grated Parmesan cheese
1 stick butter, melted
4 small green onions, finely chopped
1 dash nutmeg
Recipe
Firstly: The sauce to be made a day ahead of time. It gets better the second day. Mix 1/2 cup dry mustard (colemans is good) with 1/2 cup of white vinegar. Let stand for 4 hours - this is very important! Then in small saucpan mix 1/4 cup sugar and 1 egg yolk. Cook over low heat and add mustard/vinegar mixture. Stir constantly until thick. Cover and refrigerate.
Spinach Balls - mix together ingredients. When mixed well shape into 1 inch balls. Refrigerate until ready to bake. Bake 350ºF on ungreased cookie sheet for 10-15 minutes. Serve hot with mustard sauce.
