    Appetizer: Spinach & Sausage Stuffed Mushrooms

    List of Ingredients

    1 12 ounces pk frozen spinach souffle (stouffers)
    3 tablespoons chopped onion
    2 tablespoons butter
    2 1/3 cups herb seasoned stuffing mix
    3/4 cup water
    8 ounces bulk Italian sausage - cook, crumble,drain
    1/4 cup grated Parmesan cheese
    3 pounds whole large mushrooms, stem removed

    Recipe

    Defrost spinach souffle in microwave at 50% powder for 6-7 minutes. In medium saucepan, cook onion in butter until tender. Add water; bring to a boil. Remove pan from heat. Add stuffing mix and stir until moistened. Stir in spinach souffle, sausage and cheese. Arrange mushrooms in jelly roll pan; fill with spinach mixture, mounding slightly. Sprinkle with additional cheese if desired. Bake at 400ºF for 10-15 minutes or until cheese and mushroom lightly browned. Yield: 8-10 servings.
