    Sides: Boone Tavern Spoonbread

    List of Ingredients

    2 C. yellow cornmeal
    1 teaspoon salt
    2 teaspoons baking powder
    4 eggs separated
    2 C. boiling water
    butter (no substitute)

    Recipe

    Sift cornmeal, salt and baking powder together in a mixing bowl. Add boiling water to meal mixture, enough to make a medium batter. Add beaten egg yolks, stirring gently. Last of all, add stiffly beaten egg whites, folding in carefully. Pour into a greased bread pan or ovenproof skillet and bake at 400¡F. until golden brown. Serve hot with real butter.
