Desserts-Pie: Best Ever Sweet Potato Pie

3 - 4 (medium-size) sweet potatoes
1 stick butter (not margarine) [1/2 cup]
1 cup sugar
1/2 cup dark brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon allspice
A pinch of mace
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs (well-beaten)
1 large can evaporated milk (do not use low-fat or fat-free)
2 9-in. pie shells
Recipe
Boil sweet potatoes until tender. Pour off water & cover potatoes with cold water. ) Peel potatoes while they are still very hot. (Do not let them get too cool). Place potatoes in a large bowl & mash them very well. Put butter in with potatoes & mix until butter has melted.
In a separate bowl- mix sugars, spices & salt - stir well. Add vanilla extract to sugar/spice mixture. Then dump this mixture in with the potatoes. Beat eggs, add to potatoes & mix well.
FINALLY, begin adding evaporated milk to pie mixture a little at a time. Mix well after each addition of milk. (You might or might not need to use the whole can of the milk). The pie mixture should not be too juicy or runny.
Pour pie mixture into pie shells & bake at 350 degrees for 45-60 minutes. (Check pies after 35-40 minutes & continue checking every 5 minutes thereafter). Pie is done when toothpick inserted into center comes out clean.
