Leftover Turkey: Turkey Salad w/ Mandarin Oranges

Orange juice 1/4 cup
Red wine vinegar 1 1/2 tbsp
Each, oil and honey 1 tbsp l
Poppy seeds 1 1/2 tsp
Dijon mustard 1 tsp l
Salt 1/2 tsp
Pepper 1/8 tsp
Red leaf lettuce, torn into bite-sized pieces 4 cups
Romaine lettuce, torn into bite-size pieces 2 cups
Cooked turkey breast, cut into 1/2 inch strips 3/4 lb
10 1/2 oz can Mandarin oranges, drained 1
Orange zest
Recipe
DRESSING:
In a small bowl combine orange juice, vinegar, oil, honey, poppy seeds, mustard, salt and pepper. Set aside.
SALAD:
In a large bowl toss together lettuce, turkey and oranges. Pour dressing over turkey mixture and toss gently. Garnish with orange zest and serve immediately. Serves 4
