    Leftover Turkey: Turkey & Roasted Pepper Pannini

    List of Ingredients

    8 large slices crusty Italian bread
    8 slices cooked Butterball® turkey, breast
    1 12 fluid ounce bottle roasted red pepper, drain, cut in strips
    1 4 fluid ounce can chopped ripe olives
    8 ounces sliced Provolone or mozzarella cheese
    1/4 cup creamy Italiian or ranch-style salad dressing
    PAM® No-Stick Cooking Spray

    Recipe

    1. Top each of 4 bread slices with 2 turkey slices, 2 to 3 pieces red pepper, 2 tablespoons olives and 2 ounces cheese. Spread remaining bread slices with salad dressing and place (dressing side down) on top of each. Brush outside of sandwich with olive oil or coat with cooking spray.

    2. Heat a large skillet over medium heat until hot. Add sandwiches and heat until bread is golden, about 4 minutes. Turn sandwich over and grill second side until golden.

    3. Note: May place sandwich in a preheated countertop grill. Grill until bread is golden and cheese has softened, about 3 minutes.

    Serves 4.
