    5 medium potatoes (red or white), peeled
    bowl of ice water
    3 tablespoons oil
    2 tablespoons butter
    1/4 teaspoon pepper
    1/2 teaspoon salt

    Recipe



    Grate potatoes into ice water. Let sit 15 minutes, then drain and pat dry. In a large fry pan, heat the butter and oil. Mix the potatoes with the spices and pack them into the fry pan. Keep on low heat until golden on the bottom, then flip and fry on the other side. Cut into squares or slice like a pie. Serve with spicy mayonnaise, ketchup, applesauce or chutney.
