1 1/2 cups whole wheat pastry flour
1 stick melted butter
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup honey
1 tablespoon vinegar
1 cup water
1 cup currantsRecipe
Whisk all together and stir in currants. Bake in an ungreased 9x9 inch pan at 350ºF for aobut 1/2 an hour or until done. Variations: Lemon Cake: omit currants; add grated rind of 1 lemon, juice of 1 lemon and 1 tsp lemon extract. Spice cake: omit currants; use molasses in place of honey and add 1 cup mashed squash or sweet potato - reduce water to 1/2 cup and add 1/2 tsp. each ginger, cloves and cinnamon. Chocolate Cake: omit currants - add 4 tbl. cocoa powder, 1/4 c. more honey (to the cocoa), and 1 tsp vanilla.
