    12 spring roll wrappers
    2 cups bean sprouts
    3/4 cup spiced tofu*
    3 cups shredded cabbage
    2 cups shredded spinach
    1 cup shredded carrots

    Recipe



    * If spiced tofu isn't available, simmer firm tofu, diced small, in tamari and ginger until crusty, about 10-15 minutes. Chop or shred sprouts, tofu, cabbage, spinach and carrots fine. Place about 3 tbl. of filling into center of square wrapper. Fold the bottom corner up over the filling and then tuck in ends. Roll up. When you reach the last corner, dip your finger in water and rub the flap to seal it. Place flap side down in a pan of hot oil. When golden, roll over until all sides are golden. Drain on paper towel. Send along with sweet and sour dipping sauce.
